Ingredients
  

For the Cake:

  • 1 package 14.3 oz Oreo cookies (about 36 cookies)
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 2 packages 3.4 oz each instant chocolate pudding mix
  • 3 1/2 cups cold milk
  • 1 teaspoon vanilla extract
  • 12 oz Cool Whip or homemade whipped cream

For the Toppings:

  • 1/2 cup shredded coconut
  • Green food coloring
  • 1 cup pastel candy eggs e.g., Cadbury Mini Eggs, M&M’s, or jelly beans
  • Peeps marshmallow bunnies or chicks optional, for decoration

Instructions
 

  • Place the Oreos in a food processor and pulse until finely crushed.
  • If you don’t have a food processor, put them in a zip-top bag and crush with a rolling pin.
  • Set aside.
  • In a large mixing bowl, beat the cream cheese and butter together until smooth.
  • Add powdered sugar and mix until well combined.
  • In a separate bowl, whisk together chocolate pudding mix and cold milk until thickened (about 5 minutes).
  • Stir in vanilla extract for extra flavor.
  • Gently fold the pudding mixture into the cream cheese mixture until fully combined.
  • Fold in Cool Whip until smooth and fluffy.
  • In a 9x13-inch dish (or individual cups), spread half of the crushed Oreos on the bottom.
  • Evenly spread the pudding mixture over the Oreos.
  • Sprinkle the remaining crushed Oreos on top to create the final “dirt” layer.
  • In a small bowl, mix shredded coconut with a few drops of green food coloring until evenly coated.
  • Sprinkle the green coconut grass over the cake.
  • Scatter candy eggs on top to resemble an Easter egg hunt.
  • Add Peeps marshmallow bunnies or chicks for an extra festive touch!
  • Cover and refrigerate for at least 2 hours (or overnight for the best flavor).
  • Serve chilled and enjoy!
