Place the Oreos in a food processor and pulse until finely crushed.
If you don’t have a food processor, put them in a zip-top bag and crush with a rolling pin.
Set aside.
In a large mixing bowl, beat the cream cheese and butter together until smooth.
Add powdered sugar and mix until well combined.
In a separate bowl, whisk together chocolate pudding mix and cold milk until thickened (about 5 minutes).
Stir in vanilla extract for extra flavor.
Gently fold the pudding mixture into the cream cheese mixture until fully combined.
Fold in Cool Whip until smooth and fluffy.
In a 9x13-inch dish (or individual cups), spread half of the crushed Oreos on the bottom.
Evenly spread the pudding mixture over the Oreos.
Sprinkle the remaining crushed Oreos on top to create the final “dirt” layer.
In a small bowl, mix shredded coconut with a few drops of green food coloring until evenly coated.
Sprinkle the green coconut grass over the cake.
Scatter candy eggs on top to resemble an Easter egg hunt.
Add Peeps marshmallow bunnies or chicks for an extra festive touch!
Cover and refrigerate for at least 2 hours (or overnight for the best flavor).
