Ingredients
  

  • 1 box 15.25 oz white or yellow cake mix
  • ½ cup 1 stick unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt optional
  • ¼ cup granulated sugar for rolling

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the cake mix, melted butter, eggs, vanilla extract, and salt.
  • Stir until the mixture forms a smooth, thick dough. If it's too sticky, refrigerate for 15-20 minutes.
  • Scoop tablespoon-sized portions of dough and roll them into balls.
  • Roll each dough ball in granulated sugar to coat.
  • Place them 2 inches apart on the baking sheet.
  • Bake for 9-11 minutes, or until edges are set and slightly golden.
  • The centers may look soft—this is normal! They will firm up as they cool.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  • Enjoy warm or store in an airtight container for up to 1 week.
